Grilled Beef Steak and Mango Salsa with Endive

This recipe features a great combination of flavours — ginger flavoured beef steak with the fresh tart flavours of the mango salsa. APPETIZER BITES: Tuck strips of steak into individual endive leaves and top each with some Mango Salsa. Or serve on a buffet as a warm main course salad.

Beef “Lollipops” with Cantaloupe Salad

Serve with the suggested salad or just serve as beef bites with the reserved dressing as a dipping sauce. If you want more of an orange flavour in the dressing, try adding a teaspoon or so of orange juice concentrate (undiluted). OPTION: If you would rather just serve slivers of cooked steak with the salad, you can skip making the lollipops and cook steak whole, carving it across the grain to serve.

A super tasty and easy meal with Asian inspired flavours that come from ingredients that you likely have in your fridge. To make it a stand-alone meal (minus the lettuce cups), stir in some frozen mixed veggies, cook through and serve with steamed rice.

Seared Beef Carpaccio-Style with Pickled Shallots, Veg and Chimichurri Sauce

Rare slivers of beef are served with roasted potato coins (sweet potato or not), chimichurri sauce and mixed greens topped with pickled shallots to finish the dish. Although the recipe is easy, there are several components to the dish, so think about making the pickled shallots, sauce and dressing for the greens ahead. Don't stress if you end up with leftover sauce or shallots as these are terrific condiments you can use for later meals. Try the pickled shallots to dress sandwiches, burgers or salads. Extra chimichurri sauce, is great with scrambled eggs, quiche, cheese or burgers or as a spread for toasted pita.  

Beef Goi Cuon Salad

Chef Anna Olson developed this refreshing salad as inspired by the salad rolls that often start a Vietnamese meal.  Rice noodles are tossed with crunchy, colourful vegetables and peanut ginger dressing. The salad is made more substantial as the main meal by adding slow-simmered beef blade pot roast.  Bonus: Save the broth used to cook the pot roast to enjoy as the starter for a Pho soup.

Serve warm Korean Beef spooned into individual Bibb lettuce leaves. Top with a squeeze of lime juice and toppings such as diced sweet red pepper, shredded carrot, cucumber, torn cilantro or mint leaves.

Grilled Flank Steak and Puttanesca Salad

Andrea Buckett Cooks created this delicious steak recipe which incorporates all the flavours we love about "puttanesca" into a summer fresh salad. The steak is grilled with only salt and pepper then gets a “reverse rub” after it comes off the grill. This means the flavours of the rub get to shine and aren’t dimmed by charring on the BBQ.
