Beef’n Blues Wagon Wheel Bites

Everyone loves puff pastry appetizers. These homemade appetizers will be a hit at your next party. What a great way to turn leftover Braised Beef Ribs Harvest Stew into a simple appetizer that can be made ahead and baked just before guests arrive.

 1 piece thawed puff pastry (half a 450 g pkg)
 1 cup crumbled blue cheese
 2 eggs, lightly beaten
Horseradish Dip
 ¼ cup horseradish
 1 cup sour cream
 ¼ cup minced fresh chives

On lightly floured surface, roll out puff pastry to a ¼ inch thickness 12 x 12 inches .

Mince beef stew and sauce on cutting board; spread mixture all over pastry, leaving a 1-inch border around all the sides. Top with blue cheese.

Starting with the long side, roll up in a log shape. Seal long edge of pastry with some of the egg wash (reserving remaining egg wash for later use.) Place puff pastry roll seam side down on parchment lined baking sheet. Chill for at least 1 hour.

Slice pastry roll crosswise into 1-inch slices. Place slices on parchment-lined baking sheet. Brush each with remaining egg wash; bake in 425°F oven until golden brown, about xx 10 minutes.

Horseradish Dip:

Meanwhile, combine horseradish with sour cream. Top warm Wagon Wheel Bites with minced fresh chives and serve with horseradish sour cream mixture as a dipping sauce.
