Beef Blinis Bites

This recipe makes 2 steaks so you can use one steak for a dinner for 1 or 2 people (e.g. make a steak sandwich or salad for 2 using some of the Jam in the dressing) and then use the reserved steak (and reserved Jam for an appetizer the next day with the Blinis).

 

Beef Blinis Bites

 2 Beef Strip Loin Grilling Steaks, 1-inch (2.5 cm) thick (each about 8 oz/250 g)
 ½ cup soy sauce
 2 tbsp lemon juice
 2 tbsp vegetable oil
 1 tbsp cornstarch mixed with 1 tbsp water to make a paste
Onion Jam
 1 tbsp EACH butter and extra-virgin olive oil
 3 onions, chopped
 ½ tsp EACH salt and freshly ground pepper
 2 bay leaves
 1 cup golden brown sugar
 ¾ cup balsamic vinegar
 ¼ cup minced fresh parsley
Green Onion Blinis
 ½ cup all-purpose flour
 3 green onions, minced
 ¾ tsp baking powder
 ½ tsp salt
 1 cup milk
 1 egg
 1 tbsp butter

Pierce steaks all over with a fork and place in sealable freezer bag. Add in soy sauce and lemon juice, seal and refrigerate for 30 minutes to marinate.

To cook the steaks: Remove steaks from marinade (reserve marinade) and pat dry with paper towel .

Heat oil in large cast-iron skillet or heavy pan over medium-high heat.

Add steaks and sear, turning once, until medium-rare 145˚F (63˚C), about 10 minutes. Let steaks rest for 5 minutes.

While steaks rest, add marinade to pan. Bring to boil, whisk in cornstarch mixture. Whisking until thickened, about 3 minutes.

Set one steak aside to make bites within 3 days. Cut other steak in half and serve with beef sauce and some onion jam.

To make the Onion Jam:

Heat oil and butter in saucepan over medium-high heat. Add onions, salt, pepper and bay leaves. Cook until onions are softened and slightly golden, stirring, about 10 minutes.

Add sugar and cook, stirring until caramelized and sugar is dissolved, about 2 minutes. Stir in balsamic vinegar. Bring mixture to a boil; simmer mixture until thickened, about 12 minutes. Remove bay leaves. Stir in parsley. The jam will thicken as it sits. Makes 1 ½ cups (375 mL) (Make-ahead: Cover and refrigerate for up to 1 week.) Reserve ½ cup onion jam for green onion blinis.

To make the Green Onion Blinis:

In medium bowl combine flour, onions, baking powder and salt.

In separate bowl, whisk together milk and egg. Whisk milk mixture into the flour mixture.

Heat butter in large non-stick skillet over medium heat. Drop batter by tablespoons into skillet. Cook over medium heat until bubbles form on top side of blini, about 2 minutes. Flip and continue to cook, until golden, about 1 minute. Repeat with remaining batter. Adding more butter as needed (approx. ¼ cup total). Makes approx. 28 blinis.

To make Beef Blinis Bites:

Carve reserved steak across the grain into 28 thin slices. Place a thin slice of steak on each blini, top with dollop of onion jam. Garnish with finely chopped green onions.
