Micro Meat Loaf

In this recipe the title “Micro” does mean small, however this meatloaf is also cooked in the microwave! The microwave is an amazing time-saving tool in the kitchen for steaming veggies, melting chocolate, and, in this case, baking personal-size meat loaves for 2.

Topping
 ¼ cup (60 mL) EACH ketchup and barbecue sauce
 2 tbsp (30 mL) Worcestershire sauce
 1 tsp (5 mL) brown sugar
Meat Loaf
 1 egg, beaten
 ¼ cup (60 mL) dry bread crumbs
 2 tbsp (30 mL) ketchup or barbecue sauce
 2 tbsp (30 mL) milk
 ½ tsp (2 mL) EACH garlic powder and onion powder
 ¼ tsp (1 mL) EACH salt and pepper
 ½ lb (250 g) Extra Lean Ground Beef
 Cooking spray or canola or sunflower oil

1. Topping: Combine ketchup, barbecue sauce, Worcestershire and sugar in a small bowl.

2. Meat Loaf: Combine egg, bread crumbs, ketchup, milk, garlic powder, onion powder, salt and pepper in a large bowl. Gently mix in ground beef with a fork (careful not to over-mix). Divide meat mixture in half.

3. Shape half of the meat mixture into a lightly oiled 5-inch (12 cm) ramekin, leaving small hole in middle like a doughnut.

4. Cover with waxed or parchment paper. Microwave at MEDIUM (50%) power for 3 minutes.

5. Remove paper and spread one-third of Topping over meat loaf. Replace paper, covering loosely. Microwave at MEDIUM (50%) power for 3 minutes or until a digital instant-read thermometer inserted into thickest part of of meat loaf, avoiding the bottom, reads 160ºF (71ºF). Let rest for 5 minutes and repeat with the remaining meat mixture and cook the second meat loaf. Serve drizzled with remaining Topping.

These individual meat loaves are moist, delicious and cooked in just 6 minutes per loaf! However, if you want to make 4 servings, just double the ingredients and use one 9-inch (25 cm) round baking dish or pie plate. Create a larger ‘doughnut’ hole in the centre and increase the cooking time to 8 minutes.
