Java Pepper Steak

The coffee in this recipe may seem unusual, but it beautifully balances the other flavours. If it’s too unconventional for your liking, it can be omitted.

 4 tsp (20 mL) finely ground coffee (not instant), optional
 4 tsp (20 mL) pepper
 2 tsp (10 mL) ground cumin
 4 Beef Grilling Medallions (e.g. Rib Eye, Strip Loin or Top Sirloin), 1 inch (2.5 cm) thick (1-1/2 lb/750 g)

Combine coffee, pepper, cumin, and salt to taste in large sealable freezer bag. Shake each medallion separately in bag until evenly coated.

Place medallions on lightly oiled grill over medium-high heat; close lid and cook, turning once, for 6 to 7 minutes per side for medium or to desired doneness.

Remove to platter; tent with foil and let stand for 5 minutes.
