Classic Reuben Sandwich

A classic Reuben sandwich is a restaurant favourite sandwich that can be easily made at home. Perfect for parties or weekend get-togethers. These sandwiches are great to feed a crowd.

 2 tbsp butter
 8 slices light rye bread
 ½ cup Thousand Island dressing
 8 thin slices prepared corned beef (see cooking video instructions below)
 1 cup sauerkraut, well-drained
 4 slices Swiss cheese
 Dill pickles, optional

Preheat a large skillet on MEDIUM heat.

Lightly butter one side of bread slices. Spread non-buttered sides with Thousand Island dressing.

On 4 bread slices, layer a few slices corned beef, 1/4 cup sauerkraut and 1 slice Swiss cheese. Top with remaining bread slices, buttered sides out.

Cook until the bread is crisp and golden brown, about 4 minutes. Flip and cook the other side is golden brown, the cheese is melted, and the sandwich is warmed through. Serve hot with pickles.
