Canadian beef classes and butchery demo for event coordinators
Monterrey is a well-known market for premium corporate events, large groups, wedding and social receptions all of which require food catering. Canada Beef International Institute (CBII) Latin America and Mexico (LATAM) partnered with Airó Eventos, one of the largest and most popular reception venues in the city to conduct four butchery demonstrations and product tastings for 60 event coordinators.

To educate these event planners about the food options available for their clients, Airo´s Executive Chef Jaime Cavazos, a long-time promoter of the Canada Beef brand, conducted four beef demonstrations. Each demonstration happened on a different date and focused on popular cuts such as rib eye and tenderloin. He also demonstrated cuts from the clod and chuck roll and highlighted which would be best for different budgets.



The demonstrations included cutting, cooking and preparation of the cuts. Chef Cavazos showcased braising, grilling and roasting methods. CBII LATAM also provided a detailed presentation about the Canadian beef industry, beef quality grading and sustainable production methods.

Participants were given a selection of wines to taste that paired with the beef dishes being prepared. These were served as the event coordinators learned about the importance of choosing high-quality beef cuts for their customers.

 

CBII LATAM provided the beef cuts for each of the four classes, as well as branded aprons along with related educational materials. Classes were shared on social media by all event coordinators which led to significant brand awareness. A number of their followers expressed interest in taking these courses.

COVID-19 Update
Based on the daily technical reports published by the Ministry of Health, at the end of August, during the fifth wave of COVID, there were 1.2 million new infections, attributed to the Omicron variant.

During August there was a downward trend in the number of confirmed cases, however, the monthly number of confirmed cases is still higher than in June and similar in number to the first wave. After the start of the vaccination program, a decrease in infections and deaths was observed, at least in the group aged 70 to 89 years. Mexico’s population has a 37% rate of non-vaccinated people, so it’s become necessary to put into place stronger measures for those people entering the country to avoid further COVID transmission.
