Michael Young, president of Canada Beef and accomplished butcher with more than 40 years in the Canadian red meat industry, is among the international judges selected to preside over the 2022 World Butchers’ Challenge (WBC), also known as ‘The Greatest Butchery Event on Earth.’

Young will represent Canada at the WBC and The World Champion Butcher Apprentice and Young Butcher Competitions in Sacramento, California, September 2-3. Young, an experienced competition judge and long-time proponent of skills training focused on excellence in butchery, is looking forward to giving back to the profession at the competition.

“Craft-butcher competitions are an excellent way for Canada Beef to support and promote the quality of Canadian beef and veal and the skills and creativity of Canadian butchers when they compete on the global stage,” he said.

Excitement for the so-called ‘Olympics of Butchery’ is already building. The WBC 2022 marks the first time teams from Canada, Mexico, Iceland and Wales will join the competition, bringing the total number of teams to 16. It also marks the first time the event will be held in the U.S.

Launched in 2011 as a butchery competition between Australia and New Zealand, the event has grown and evolved, added teams and travelled to England and Ireland.

The WBC is a timed event with competing teams given a side of beef, a side of pork, a whole lamb and five chickens, which they must then transform into a themed display of value-added products. Independent judges score each team based on technique and skill, workmanship, product innovation, overall finish and presentation.

The World Champion Butcher Apprentice and Young Butcher competitions are individual contests and are timed events. Both groups of butchers must break down a range of primal cuts into a display of pre-determined products and their own creations.

All judging will be overseen by Head Judge, Todd Heller.

Butchery is an important profession that gets its proper due in competitions like this, said Young. “There’s no better demonstration of the creativity, innovation and technical skills involved than to see the next generation working alongside experienced pros at competitions.”

Canada Beef has launched initiatives to support skills training to promote excellence in butchery and culinary arts for industry and drive interest in enrollment at Canadian vocational institutions.
