![]() Congratulations to Canadian Beef Centre of Excellence Executive Director Mathieu Paré for receiving the Chef of the Year award from the Calgary Academy of Chefs and Cooks (CACC) at a special event on March 24. The CACC is the local chapter of the Culinary Federation which unites chefs and cooks across Canada in a common dedication to professional excellence. The Chef of the Year trophy is awarded to a chef working in the foodservice industry, or an instructor in culinary arts, for positively promoting or publicizing the association or profession locally and/or nationally, to the benefit of members. Paré, who joined Canada Beef in 2017, was thrilled to be recognized by such a prestigious award. “It is an honour, and a dream come true, to be recognized amongst this group of distinguished Canadian industry leaders,” he said. Training for culinary students enrolled in post-secondary institutions across Canada is a major focus for the Centre of Excellence. In addition to familiarizing students with lesser-known beef cuts and creative butchery techniques, Paré and his team at the Centre of Excellence help students put to the test with culinary and butchery competitions that also serve to support skills training for industry. Paré is a graduate of Southern Alberta Institute of Technology (SAIT) Culinary Arts program where he received the Governor General’s Medal for Academic Achievement. As a chef, Paré rounded the corner at La Chaumière, and went on to work at Quails Gate Winery, Rouge, the Royal Canadian Pacific, Boxwood Café, Charbar, and the Wickaninnish Inn. Previously a CACC Young Chef member, in 2022 Chef Mathieu rejoined and was elected to the Board as Social Director. Back to main page |
