Culinary Student Steak-citement The prize for the winning junior chef team of the Canada Beef-sponsored Steak 360 Challenge was an educational day of learning from some of the best culinary experts in the beef business—chefs from The Keg Steakhouse. The Steak 360 Challenge is part of an effort to optimize steak for restaurant take-out. Canada Beef worked with partners Taste Canada Cooks the Books and The Keg Steakhouse to develop the student competition for Canada’s culinary school teams. Their task was to research and present their recommendations for the best steak for take-out. The winning team, Chefs Emily Eyre and Josh Massie from Fleming College of Peterborough, Ontario, received their prize on February 24. Their super steak-out experience started with a tour at The Keg in Woodbridge, and then some hands-on work in the kitchen with Corporate Chefs Steve Lewis, Stuart Martins (Food Services Manager Ontario East) and Brian Murray (Food Services Manager Ontario West). Students and Chefs worked together to create the winning dish, Butter-Basted Rib Eye with Potato Rösti and Stuffed Mushrooms, with an eye to take-out potential. After working together to take the dish to ‘Keg perfection’, the students headed to Macgregors Meat & Seafood Ltd. to meet Category Manager John Tarantello for an exclusive tour of the Macgregor’s meat processing facility and a review of The Keg's beef program. The students also observed a professional beef cutting demonstration from a Macgregor butcher who showed how to finesse a culotte steak (top sirloin cap) by beveling the fat edge. Next up was an insightful beef tasting with Innovation Chef Simon Roach. The students were so enthused by the experience that they commemorated their participation with custom tattoos. Great partners like Taste Canada help Canada Beef grow partnerships with culinary schools and influential restaurant chains like The Keg.
