Food Style Kyushu and JFA Buyers Meeting Canada Beef International Institute (CBII) Japan recently participated in two trade shows—Food Style Kyushu and the Japan Foodservice Association (JFA) Buyers Meeting. These shows presented the opportunity to showcase several popular beef cuts along with recently developed Canadian beef value-added products. Food Style Kyushu is a regional trade show targeting buyers in the Kyushu area of Southwest Japan (population 14 million). The show, held in the capital city Fukuoka, provided the opportunity to expand sales channels in Southwest Japan. The show was held November 14 -15, 2023 and recorded 17,000 visitors. JFA is Japan’s largest foodservice association, with 800 member companies from the foodservice sector. They hosted their private trade show, the JFA Buyers Meeting, for members and supply partners on November 15, 2023. With the foodservice industry returning to normal operations, buyers were looking for new products for the end of the year and New Year’s holidays. Over 2,000 foodservice buyers visited the one-day annual event. The CBII Japan team supported Canadian beef exporters and distributors exhibiting at the Canada Beef booth, where meetings with buyers and meat industry stakeholders took place. Korean-style Canadian beef recipes CBII Korea recently hired a well-known cooking academy instructor to create 15 Korean-style Canadian beef recipes. These recipes will be uploaded to the Korean-language Canadian Beef Information Gateway landing page, website, and Instagram page. This is the first time recipes have been developed for the Korean market and the results will attract the attention of Korean consumers. Nanwoo Lee is the owner and cooking instructor at the well-regarded Now Cooking Studio in Seoul. She has published many recipe books, including one for Korean pork. For the Canadian beef project, Lee developed recipes for fundamental Korean beef dishes including soups, stews, stir fries, and side dishes using three Canadian beef cuts. The cuts included short ribs, short plate, and flat iron. CBII Korea plans to continue to work with Lee to develop more recipes using other Canadian beef cuts popular with Korean consumers.
