Canadian beef course at Tokyo Culinary College
The Canada Beef International Institute (CBII) Japan partnered with the Federal Meat Academy (FMA) in Japan to provide Canadian beef education courses to Tokyo Culinary College (TCC) students. FMA is the only school in Japan offering high-level butchery education classes.



The course is offered as a series of classes to the more than 100 culinary students attending the college. The classes provide the opportunity to gain in-depth knowledge about raising, processing, butchery, merchandising, and flavour profile of Canadian beef.

Three classes were conducted at TCC from December 15 to 18, with 40-50 students participating in each class. Each three-hour class began with a presentation by a CBII Japan staff member. The presentation was followed by a Canadian beef cutting demonstration and tasting by an FMA instructor.

 

The classes provided students with practical information and the chance to work with specific Canadian beef cuts. Students can now apply this experience to their future restaurant positions.

Canadian beef promotion with Korea’s Hyundai Green Food January 3, 2024
Hyundai Green Food is one of Korea’s largest food catering companies, serving 600,000 meals per day at over 550 institutional restaurants at factories, offices, and hospitals.

In early January, Hyundai Green Food served a special beef rib soup using Canadian back ribs, for Kia’s (the car company) New Year kick-off ceremonies at 30 restaurants at Kia plants. Around 70,000 employees tasted this Canadian beef back rib soup.

The catering company primarily uses imported beef from the U.S. and Australia. However, their senior beef buyers have become interested in trying Canadian beef and purchased around 20MT of Canadian back ribs for this special occasion. They were satisfied with the quality and taste and plan to serve Canadian beef at other restaurants.

This is the second time that Hyundai Green Food used and promoted Canadian beef; they previously used approximately 90MT of Canadian flat iron in March 2023.
