Canadian beef course offered at culinary college
Canada Beef International Institute (CBII) Japan partnered with Japan’s Federal Meat Academy (FMA) to provide courses about Canadian beef to their culinary students in Tokyo. FMA is the only school offering high-level butchery classes in Japan.

The course was offered as a series of classes in December to more than 100 culinary students attending the college. Each three-hour session began with a presentation by CBII Japan Associate Director Yuko Onizawa. Starting with a basic overview of beef, Onizawa then presented information about animal health, food safety, grading standards and the quality of Canadian beef.

Next, a FMA instructor prepared the group for cutting and cooking demonstrations by reviewing Canadian beef cutting specifications and cooking applications. These demonstrations showed students the many options that Canadian beef offers.

 

Students then had the chance to enjoy samples from the cooking presentation, including chuck eye roll, top blade, hanging tender and outside skirt.

These classes provided practical information and the chance to work with specific Canadian beef cuts. Students can now apply this experience in their future restaurant positions.

 

Costco Japan Update
Bulgogi is a popular Korean dish using thin, marinated slices of beef that are grilled or stir-fried. Costco Japan introduced take-home bulgogi packs made with Canadian beef at all 19 of their locations in early 2022. Since then, these packs have become a best-selling item, utilizing 2,700 MT of Canadian beef. CBII Japan supported these sales with in-store sampling campaigns during the year.

 

Another popular feature at Costco Japan are the cheeseburgers available at Costco food courts. For the past three years, all cheeseburgers sold at the Costco food courts in Japan are made with 100% Canadian beef. That equates to an additional volume of 45 MT per month.



Canadian beef food truck appearances
The Canada Beef Food Truck appeared 13 times at various venues in November and December. These events ranged from community festivals to theme parks. Fans greeted the truck enthusiastically, and the menu offerings were well-received. The food truck will be visiting venues until the end of March 2023.

Japan COVID-19 Update
As the rate of new COVID-19 infections continues to decrease, many took the opportunity to travel during the New Year holiday, leading to crowding in many places. Concerned about potential outbreaks, Japan's Health Ministry has approved the retail sale of government-certified antigen COVID testing kits. Officials hope to reduce the burden on the healthcare system by allowing people to conduct tests at home.

South Korea COVID-19 Update
The daily number of COVID-19 infections has fluctuated between 23,000 and 88,000 in December and early January. The government plans to remove the indoor mask mandate gradually (the last remaining pandemic restriction), as part of its effort to move on from the pandemic. Officials remain concerned that Omicron subvariants resistant to updated vaccines have been arriving in Korea and so will continue to monitor the situation.
