![]() The Canada Beef team was pleased to participate in the Quebec Beef Industry Conference (CIBQ) in Lévis, Quebec, on November 19. With the conference themed, ‘Preparing for the Future,’ the event featured timely and informative presentations about significant issues facing the beef and veal sectors. Quebec Beef Producers Chairman Sébastien Vachon provided remarks on the importance of improving and increasing AAA production and of working cohesively to grow the industry. Canada Beef President Eric Bienvenue provided an organizational update and outlook for conference attendees and discussed the challenges and opportunities ahead for the industry. He then outlined Canada Beef’s plans and strategies to maintain market share and consumer mindshare. ![]() Canada Beef Retail Manager, Channel Marketing, Scott Stewart, and Canadian Beef Centre of Excellence Executive Vice President Mathieu Paré provided a cutting demonstration on seam butchery, a traditional European technique that uses natural seams for the separation of muscles. The team explained that the seam butchery method can increase the value and eating enjoyment of cuts of beef that have been considered lesser when compared to the high-value middle meats, and provide a more specialized, gourmet eating experience through, in part, matching individual muscles to their best applications or cooking methods. The team presented these opportunities with the Inside Round with a focus on Canadian Beef Advantage quality attributes identified within the cut that can be optimized through the seam butchery techniques presented. The presentation also pointed out how merchandising in this way could support new opportunities in retail, foodservice and in specialty applications like senior lifestyle applications. The presentation was delivered in French and English simultaneously to 200 attendees at the Centre Des Congrès. Prior to the conference, Bienvenue toured a beef farm, a feedlot and the Auction Reseau St-Isidore with Quebec Beef Producers Chair Vachon and board members Kirk Jackson, Jean-François Dion, Doris Boissonnault, and Martin Drainville. The group is pictured here with Kaven Bégin and Caroline Fortin, co-owners of Louber Farm, a cow-calf, beef genetics and pork production operation. The group also visited the Jules Coté Farm, a feedlot and cash crop operation.In October, Bienvenue and Paré participated in SIAL Paris.
