Michael Young judges Ontario’s Finest Butcher Michael Young, President of Canada Beef served as one of three judges at Ontario’s Finest Butcher competition held in Toronto on September 14. “I was honoured to be asked to participate in this competition,” says Young. “Butchery is an important profession and I’m happy to see the next generation alongside experienced pros keeping it top-of-mind with competitions like this one.” The competition, which was launched seven years ago, was hosted by Meat & Poultry Ontario. Twelve competitors from across Ontario faced off in an elimination round to determine the top three finalists. The top three moved on to the finals—the theme for this year’s ‘black box’ round was ‘Deja Food’ and the finalists had 30 minutes to transform two ducks, a leg of veal, and a pork bone-in loin into several remarkable-looking, display-ready items. Steve Toms, of Fortino’s in Hamilton, took home the title of Ontario’s Finest Butcher. Toms, a 2-year veteran to the competition, earned the honour after a fierce head-to-head meat cutting battle with finalists Dave Vander Velde of VG Meats, Stoney Creek and Frank DiGenova of Butcher by Nature in Toronto. “Congratulations to Steve Toms and all the contestants,” says Young. “It was an amazing show of professional butchery.” Young was also invited to be one of the international judges for the World Butchers Challenge billed as “The Greatest Butchery Event on Earth” taking place in summer 2021. “Global, national and regional craft-butcher competitions are an excellent way for Canada Beef to support and promote the quality of Canadian beef and veal and the skills and creativity of Canadian butchers when they compete on the main stage,” notes Young. With Canadians spending more time in the kitchen, interest in culinary and butchery skills has never been higher. Inspired by TV cooking shows, Canadians want to improve their kitchen know-how and are looking for resources. Canada Beef has launched a new site at cdnbeefperforms.ca/videos where home cooks and aspiring home butchers can find instructional videos. Created by the Canadian Centre of Beef Excellence there are more than 60 videos for Home-Chefs/Butchers and for Pro-Chefs/Butchers to view. Back to main page |
