Canada Beef partners with SAIT Supper Club The Canadian Beef Centre of Excellence (CBCE) partnered with the Southern Alberta Institute of Technology (SAIT) School of Hospitality and Tourism for their Supper Club SAIT+ series (SAIT Supper Club). The SAIT Supper Club features unique partnerships between the School of Hospitality and Tourism and the community. Under the instructor's guidance and in collaboration with the school’s partner, students design and execute a private or semi-public event. The students work together to develop the food and beverage menus, décor, floor plans, entertainment elements and more. On July 25, 2024, CBCE Executive Director Mathieu Paré worked with SAIT culinary and butchery instructors and students to deliver a Canadian beef backyard barbecue-themed meal for an audience that included members of the foodservice industry. The CBCE used this opportunity to adapt Gateway consumer recipes into foodservice recipes for Canada Beef's new Culinary Planners for industry professionals. The menu included Canadian beef brisket, tenderloin, strip loin, bone marrow, skirt steak, back ribs, and trim utilization (beef fat in peach crumble dessert with beef fat caramel sauce). In the lead-up to the event, CBCE provided information to students about the Canadian Beef Advantage (CBA) along with technical product education on the utilization of less-familiar beef products and their value proposition. At the event, there was an opportunity to share messaging with the professionals and consumers in the audience about the CBA, the Canadian Beef Information Gateway as well as the Wholesale Canadian Beef Information Gateway and how interested members from the trade could access available training tools and resources. Canada Beef and the CBCE actively participate in the professional development of the next generation of industry professionals in the culinary and butchery sectors. Canada Beef is proud to offer an annual scholarship program with awards for excellence in culinary and butchery to Canadian vocational institutions.
