 There is never a dull moment at Canada Beef when it comes to the marketing and promotion of Canadian beef. Following a successful CBIC in Penticton, B.C., Canada Beef was preparing to showcase the diversity of beef to the world at the 2022 World Butchers’ Challenge (WBC) in Sacramento, California, September 2-3. Canada Beef President Michael Young is among the international judges to preside over the event. WBC judges are representatives of the highest calibre the butchering trade has to offer, globally. Young will represent Canada at the WBC, also called ‘The Greatest Butchery Event on Earth.’ As an experienced competition judge and long-time proponent of skills training focused on excellence in butchery, Young is looking forward to giving back to the profession at the competition. The WBC includes the World Champion Butcher Apprentice and Young Butcher competitions. Canada Beef is also a sponsor of Team Canada, which will compete at the WBC for the first time. “I am very excited to be part of the World Butchers’ Challenge and serving as a judge for an event that will showcase the trade,” he said. “The world will see the level of skill, workmanship and creativity that butchers bring to the table, and my hope is that more young people will pursue a career in the meat business as a result.” Young added that butchery combines carcass utilization, value optimization and creativity to define excellence, unlike many culinary competitions that focus primarily on creativity and presentation.
