Canadian Beef Kitchen Connection – The Boutique hotels series To celebrate the art of cooking with fire and smoke, Canada Beef’s Mexico and Latin America (LATAM) office launched a series of partnerships with six upscale boutique hotels in Mexico. The events are supported by Sigma Foodservice Distributor and they provide and sponsor all the Canadian cuts chosen for each location. The first event took place on August 6 in the bustling city of San Cristóbal de las Casas, Chiapas. Together with Oaxaca, this is one of the most beautiful, historically rich colonial cities in Mexico. Chiapas is also known for its gastronomic offerings with influences from around the world, creating unique culinary experiences and many opportunities for quality products. Canada Beef partnered with the Bö Hotel. The successful event included 70 people from the local foodservice sector. The focus was to educate the audience on the flavour of underutilized cuts and the quality and versatility of Canadian beef cuts across the menu. Chefs Carlos Leal and Hugo Olivera showcased different beef textures and flavour profiles, using the grill to cook a cross-section of both familiar and lesser-known cuts on the menus. This included rib eye, top sirloin, Sierra steak, chuck eye steak, Denver steak, and dried Mexican-style jerky. The event was a great success and aligned with all partners’ objectives and goals. COVID-19 Update According to the Ministry of Health, in early August there were 92,852 active cases of COVID in Mexico. Mexico reported 15,738 infections and 95 deaths from the disease in a single day. As reported in the technical data of the Ministry of Health, Mexico has accumulated 6,875,708 positive cases and 328,437 deaths from the virus. In the same week, Mexico showed daily reports of active COVID cases of less than 100,000, after weeks of being above that figure and even reaching more than 260,000 in the second and third week of July. Mexico City continues as the area with the most active cases of COVID in the country. The State of Mexico is the second region with the most active cases, while Guanajuato and Nuevo León reported more than 5,000 cases each.
