CBCE Digital Resources - Video Production
Canadian Beef Centre of Excellence (CBCE) continues to develop educational video resources for Canada Beef’s new trade website, www.cdnbeefperforms.ca. Recent videos highlighted educational beef cutting techniques and equipment training for the professional butcher trade.

The goal of these videos is to provide online video training that meets the needs of market gaps and trending opportunities for retail, foodservice and Canadian beef and Canadian veal enthusiasts.

CBCE worked with a local professional butcher to document foodservice-focused portion-cutting techniques as well as safe handling of professional butcher equipment. The most recent videos covered proper procedure for utilizing a bandsaw to cut bone-in and frozen products and to show correct top sirloin portion cutting techniques.
