Canadian Beef online culinary workshop – January 25, 2022, Shanghai
CBII China partnered with FAN Culinary Education to host a culinary workshop featuring Canadian beef for foodservice. The three-and-a-half-hour workshop was delivered through a live-streaming platform.

Four Canadian beef cuts – boneless short rib, ribeye, chuck roll and top blade muscle (requested by major importers) were presented during the workshop.

Canadian beef attributes and advantages were introduced by CBII Shanghai office representative Iris Sung. Chef Clinton Zhu, President and Founder of FAN Culinary Education, presented a western-style cutting demonstration and provided solutions to utilize the cuts and trimming suitable for Japanese cuisine. Chef Robin Shen, lecturer at FAN Culinary Education (and former Executive Chef of Shanghai JC Mandarin Hotel), cooked several Southeast Asian courses utilizing the cuts.

The online workshop attracted 1,154 viewers within four hours and received positive feedback from Canadian beef local partners, foodservice professionals and meat buyers. The workshop was recorded and playback was available by QR code. The workshop recording was watched by 1,523 viewers as of March 8, 2022.

The live-stream workshop and recording provided an effective platform to deliver the Canadian beef advantages and inspirational ideas to the target foodservice audiences and helped to develop more business opportunities in the local market.

COVID-19 Update
China is fighting a new outbreak of COVID-19, the worst in nearly two years. The daily reported cases have increased rapidly, affecting 26 provinces and regions. China is taking swift measures, including launching multiple rounds of mass testing, ordering closed-loop management of some communities, and suspending traffic and in-person classes. Local governments are trying to avoid extreme measures such as city lockdowns, which would impact the local economy and the lives of people living in these communities. Compared with the first round of COVID-19 outbreaks in 2020, the Chinese population has shown greater calm toward the latest round of health challenges.

The fifth COVID-19 outbreak continues to hit hard in Hong Kong and is far beyond the city's capacity to handle. The confirmed cases and number of deaths have surpassed the fourth wave’s total. This has placed tremendous pressure on pandemic controls and on serving residents' basic needs. The impact on the local economy has been negative with severe local staffing shortages while cases continue to rise exponentially. With the full support of the central government, from daily supplies, medicines, medical staff and even construction of mobile hospitals, the Hong Kong government is doing its best to focus on reducing deaths, reducing severe illness and reducing the chain of transmission to secure the safety and health of Hong Kong citizens.

The goal of the promotion was to provide diners with a great experience featuring high-quality Canadian beef to increase awareness and ultimately increase sales.

Taiwan COVID-19 Update
The COVID-19 pandemic is slowing in Taiwan and the government is moving towards a prevention model, which will gradually ease local restrictions. Currently, foodservice operations are the only businesses to require mandatory masking indoors and there are no additional restrictions at retail. As of March 7, quarantine requirements at the border were changed from 14 days to 10 days with an expectation of reducing this to 7 days in the coming weeks. Taiwan is working towards opening its borders to travellers in Q3 2022.
