Canada Beef provides education resources to chef school programs through new Taste Canada Education Hub
Canada Beef efforts to boost awareness of the many health and environmental benefits of beef and sustainable cattle production among key audiences continue with the development of a new educational resource hub on the Taste Canada website.

As an educational awareness partner for Taste Canada’s student chef competition, Cooks the Books, since 2018, Canada Beef has provided an annual guest lecture series to participating schools to enrich discussions about agriculture’s environmental impacts, food production systems, nutrition, meat science and more. The guest lecture series and other educational resources are now available on the Taste Canada Cooks the Books Educational Resource Hub for Canadian culinary students and food professionals.

Taste Canada announced the new educational resource hub in their January 2022 e-newsletter distributed to 3,000 members, which include culinary faculty, food media and culinary writers and other food professionals. Taste Canada also announced the new hub on its social media channels, followed by posts about Guardians of the Grasslands film - part of the guest lecture series in 2019 - now featured on the Cooks the Books Educational Resource Hub



Guardians of the Grasslands is a 12-minute award-winning short film that explores the current state of one of the world’s most endangered ecosystems, the Great Plains grasslands, and the role agriculture can play as an important ecosystem service to promote its survival.

Other guest lectures include: On the Same Side of the Fence, from 2019, which sees Dr. Christian Artuso, then Manitoba Director for Birds Canada (and now with Environment and Climate Change Canada) present the consideration that environmental and agricultural concerns could be on the same side of the fence.

Putting Canada’s Food Guide into Practice: Enabling Canadians to Eat Well, is a 14-minute presentation provided by registered dietitian Carol Harrison; and the Ground Beef Tool Kit is the first-ever comprehensive education resource about Canada’s favourite meat, ground beef, covering off nutrition facts, environmental impact considerations and more.

Also promoted on the hub landing page is the Cows on the Planet podcast series. Hosted by University of Lethbridge Research Associate, Dr. Kim Stanford, and Agriculture and Agri-Food Canada Lethbridge principal scientist Dr. Tim McAllister, Cows on the Planet podcasts examine topics ranging from the role of cattle in managing food waste to the fat in the meat that we eat and the impacts of cattle on the environment.

Taste Canada, a national non-profit, works with Canadian food and beverage writers, publishers, chefs, restaurateurs, farmers, industry, culinary colleges, media and cookbook fans. Since 1998, it has presented the Taste Canada Awards, which annually recognize superior writing throughout Canada’s culinary world, in English and French.
