![]() Team Canada, World Butchers’ Challenge Canada Beef and the Canadian Beef Centre of Excellence (CBCE) are proud sponsors of Team Canada for the World Butchers’ Challenge 2020 (WBC) competition. This is the first time Canada has entered a team in this competition which will be held in Sacramento, California in September 2020. The CBCE team is working with them to share knowledge and experience to help Team Canada develop innovative and Canadian-themed concepts that reflect our diverse heritage. Team Canada Events January 19 and 20, 2020. Day One January 19, 2020 included a practice observation at the Olds College butchery training/practice facility where the CBCE provided advice and ideas for the team. These were of great benefit to the team as noted by Peter Baarda, WBC Team Canada Captain. “I just want to say thank you for all your help with strategies and ideas for us. Mathieu and Cameron gave us so much to think about and so much to put into action for our upcoming practices,” said Baarda. ![]() Day Two January 20, 2020 was a Strategy Seminar, Media Event and Innovation Workshop at the Centre where the CBCE team presented ideas focusing on Canadian ingredients, cutting and culinary concepts and the importance of trim utilization for sustainability. Media were in attendance at this event and you can view a feature report on Global News. ![]() Pampered Chef leaders’ ideation One of the roles of Pampered Chef ambassadors is to educate consumers on cooking skills and nutritious diets. CBCE is working with the organization to include knowledge about Canadian beef and its role in a healthy diet into their curriculum. CBCE provided a Canadian Beef Advantage presentation to this group in January focused on the quality, consistency, safety and nutrition of Canadian Beef. CBCE also highlighted resources like the Roundup app, website resources, CONNECT and the beef buyers merchandising guide. ![]() Ladies Livestock Lessons 2020 – Red Bow Agricultural Partnership CBCE Coordinator and Chef/Nutritionist Callie Frederick presented to the Ladies Livestock Conference (a conference for women in the business of or interested in livestock raising produced by the Red Bow Agricultural Partnership) at the Heritage Centre in Cremona, Alberta on January 19, 2020. This is part of community outreach by the CBCE. Chef Frederick offered a Secrets of Braising presentation. She also talked about Canadian Beef quality attributes and differentiation of product in international markets, explored Canadian beef resources such as the online training platform Connect, the Round Up app, cut charts, marketing library and website. ![]() Summer Synergy Auction Dinner – Alberta Barley The Canadian Beef Centre for Excellence (CBCE) offered a Canadian Beef Experience as an auction prize at the Summer Synergy conference with Alberta Barley winning the event. CBCE provided their “Experience” on December 18, 2019 at the Centre which included an interactive game-show-style trivia competition designed to develop and stimulate beef carcass knowledge. The CBCE then delivered an educational butchery session followed by a three-course dinner showcasing Canadian beef.
