![]() CBCE at Culinary Federation’s national conference Canada Beef presented at the Culinary Federation (CF) of Canada’s national conference in Kitchener-Waterloo, Ontario, from May 24-28, 2026. Canadian Beef Centre of Excellence (CBCE) Director, Chef Cameron Pappel, and Executive Director, Market Development (Canada), Mathieu Paré, leveraged a longstanding relationship with the CF to educate attendees about the attributes of Canadian beef and highlight the extensive catalogue of resources for culinary professionals. This year’s conference included, for the first time, an Educator Forum event that brought together culinary educators from across Canada for presentations and roundtable discussions. Paré and Pappel presented Canada Beef’s foodservice training tools, including the Certified Canadian Beef Training Program (CCBTP), and outlined opportunities for in-person and virtual culinary school outreach to bridge the gap between industry know-how and institutional learning. ![]() The Canada Beef team then participated in a series of interactive breakout sessions in which specific challenges and proposed innovative solutions were identified for educators, students, and the foodservice industry. At the CF Marketplace tradeshow, Pappel and Paré highlighted Canadian beef foodservice training resources as well as the new Restaurant Gateway to an estimated 300 attendees. ![]() On day three, Pappel and Paré delivered a conference breakout session attended by an estimated 25 culinary chefs, educators, foodservice distributors and operators. During the in-person workshop, participants first explored the Canadian Beef Advantage, experienced the CCBTP in real time, and then sampled three cuts of Canadian beef supplied by the CF 2026 conference sponsor, Rowe Beef. In addition, Pappel highlighted Canada Beef’s Story On Steak foodservice resource, which was built using data collected during the team’s in-person workshop at the CF 2025 conference. On the final day of the conference, Canada Beef facilitated a tour of the Ontario Beef Research Centre, where approximately 30 chefs and culinary students learned about Canadian beef production at the state-of-the-art research facility in Elora, Ontario.
