This appetizer might be bite-sized but it’s packed with flavour. Cubes of tenderloin beef are wrapped in bacon and then rolled in a dried mushroom and bread crumb mixture. This mixture adds a unique crunch and flavour punch to the beef bites. This recipe can be made ahead and baked just before guests arrive. Serve the bites with the wasabi sauce which can also be made up to 3 days ahead (store in the fridge).

Season beef cubes all over with salt and pepper. Wrap each cube in a half slice bacon; secure with toothpick. Set aside while making Crust mixture.
In mini food processor or food processor, pulse together mushrooms, green onions, salt and pepper. Remove and toss with panko crumb. Place mixture in shallow dish. Press each beef bite into crust mixture, turning to coat. (Make-ahead: Cover and refrigerate for up to 8 hours.)
Combine wasabi dipping sauce ingredients in a bowl. The dipping sauce can be made-ahead simply, cover and refrigerate for up to 3 days.
Place Beef Bites on rack setting on parchment-lined rimmed baking sheet. Bake in 400°F oven, turning once, until bacon starts to crisp and beef is still pink, about 10 minutes. Finish Bites by broiling just until golden and crisped, about 2 minutes. Serve warm with Wasabi Dipping Sauce.
Alternative dip ideas: Instead of wasabi paste you can use horseradish. For a totally different flavour try a store-bought barbecue sauce with a smoky profile. Or go on the sweet side with an orange marmalade.
