BBQ Beef Ribs with Spicy Pineapple Rum Glaze

Start these delicious ribs in the oven and finish them on the barbecue.  The sticky and sweet pineapple glaze adds a tropical twist to this rib recipe.  Beef ribs are an fantastic change from regular pork ribs.

Ingredients

rack Beef Grilling Back Ribs (about 7 ribs long), 3 lb (1.5 kg)
Seasoning Rub
chili powder
ground cumin
salt
cinnamon
brown sugar
Pineapple Rum Glaze
chopped garlic
canola oil
water
pineapple juice
hoisin sauce
soy sauce
brown sugar
lemon juice
Dijon mustard
hot sauce
cayenne pepper
cornstartch
rum or bourbon

Directions

Combine Seasoning Rub ingredients. Coat ribs in Seasoning Rub. Refrigerate for 3 hours or overnight.

Place ribs on a foil-lined baking sheet and roast in 250°F (120°C) oven for 2 to 3 hours until crispy and browned. Cool slightly; cut into individual ribs.

Meanwhile make pineapple rum glaze. Combine all glaze ingredients in a saucepan and place over medium-high heat. Bring to a boil stirring occasionally. Reduce heat and simmer 30 – 35 minutes or until thick and syrupy. Use 1/2 the sauce for basting and reserve remaining sauce for dipping.

Grill oven-roasted ribs using medium heat, for 5 to 10 minutes, brushing generously all over with glaze , turning occasionally. Serve with reserved extra glaze for dipping.
