If you’d like to make a larger batch of Chimichurri Sauce double the ingredients and use a food processor to help with the chopping. If you have any leftover sauce, keep refrigerated in an airtight container for up to 3 days and use to top any other cooked meats, poultry or fish or stir into grain or pasta dishes. Add to some mayo for a yummy sandwich spread. Fresh chimichurri can also be frozen for up to a month if in a sealed container with a layer of olive oil covering the surface.

Black Pepper Beef Thai Stir-FryYouTube chef Pailin Chongchitnant of Hot Thai Kitchen put together this super simple, super speedy and authentic stir-fry recipe. To make this stir-fry in a snap, you can use leftover steak that you cooked for dinner the night before or think ahead and cook an extra steak to use just in this recipe. Pai’s ‘season ahead’ technique for steaks helps to develop caramelization and crusting which enhances the steak flavour without being too salty. To make the recipe serve 4, simply double the recipe (except for the amount of water in the sauce).

Beef and Tomato Stir-FryGrowing up, our family had a very large garden filled with tomatoes and many other vegetables. One of the ways we’d enjoy eating the flavorful juicy tomatoes would in this homestyle beef and tomato dish. Marinating the beef with a cornstarch mixture ensures that the meat will be tender and juicy after cooking. My mom would usually slice the fresh ginger into very thin matchsticks, however, the ginger in this recipe has been left in large slices to make it easier to spot them after cooking and set aside, if desired. Be sure to stir-fry the tomatoes gently so they still retain some of their shape and texture. Serve with hot cooked rice.

Stir-fried Beef and Gai Lan (Chinese Broccoli)This stir-fry dish of beef and greens was served often at my childhood family dinner table, using our homegrown bounty of fresh picked gai lan, also known as Chinese broccoli. My daily job was to clean the garden vegetables for our meals, a job I disliked immensely since there were plenty of caterpillars and insects to pick out. That aside, when my mom would start cooking, I really enjoyed the scent of garlic, ginger and beef being fried and I couldn’t wait to eat! The method of slicing the beef steak thinly across the grain and marinating it ensures that each bite is quick-cooking, juicy and flavorful. The tender baby gai lan is first blanched, then added at the end of cooking for a quick reheat with the beef and savoury sauce. Be sure to have all the ingredients measured and ready to go as this dish cooks quickly. Serve with hot cooked rice.

Pan-seared Filet Mignon with Herbed Butter BasteThis time-honoured technique is key to making the steakhouse style steak that you crave. For best results, use a cast iron pan that has a flat surface (i.e. without the grill ridges).
