My Irish roots go so far back that I really don’t feel much of a tie to the Green Isle. But that doesn’t stop me from enjoying a traditional Irish corned beef dinner on St Patties day (and a beer too of course).

Corned Beef Dinner with Marmalade Glaze

This recipe is a perennial favourite for St. Patrick's day. Use a large slow cooker (20 to 24 cup or 5 to 6 L) for this recipe. If you have a smaller one, cut the corned beef brisket to fit. The cabbage is cooked separately after meat is finished so it won't impart its strong flavour to the other vegetables. Serve with your favourite mustard.

And if you manage to have any leftovers, you’ll be able to enjoy this simple sandwich for lunch, made with spicy mustard of your choice, mayo, Swiss or gouda cheese and sauerkraut – yum!
