Canada 150 Olé: a Mexican tribute to Canadian beef!

With our recent Canada 150 culinary celebration in Alberta, the Canadian Beef Centre of Excellence hosted Mexican celebrity, Chef Zahie Telléz along with the Fairmont Palliser’s own, Chef ‘E’ (a.k.a. Eraj Jayawickreme), for a BTV Cinco de Mayo day broadcast with BTV’s Jill Belland.

Chef Zahie shared her passion for her native cuisine and Canadian beef with a demonstration of her Tri-tip Tostada recipe using grilled beef tri-tip and a delicious pepita pesto, made with pumpkin seed and avocado. As with all of Chef Zahie’s recipes, she keeps the flavours and techniques simple so that the fresh flavours of foods shine through. Her tostada recipe can be made by either stir frying strips of tri-tip OR grill a whole tri-tip to medium-rare and car it into thin slices — perfect for barbecue season.

Chef Zahie even demonstrated how to make homemade tortilla and after seeing how easy they are to make, I am wondering why I ever bothered to buy them!! Watch how she does it, with just 2 ingredients (corn flour with water) and a kitchen bowl as a tortilla press.
