STEAKS

Ranchero Beef Steak

Pay homage to the grill with your favourite Canadian beef steak. The sauce in this recipe goes well with any Grilling or Marinating steak -- it's somewhat smoky and spicy and loaded with garden vegetables. If you can't take the heat, reduce the amount of chipotle pepper by half.

Easy Asian Grilled Beef Steak

If using Marinating Steak or Medallions such as Inside Round Marinating Medallions, pierce meat all over with a fork before marinating, and marinate for 4 to 12 hours.

Carne Asada

Use either Outside or Inside Skirt Marinating Steak (Inside is the more tender option) and ask that the silverskin membrane be trimmed off. If you can't find Skirt Steak a Flank Steak is a good substitute. Serve Skirt Steak sliced thinly with Fresh Tomato Salsa tucked into warmed tortillas or with a side of steamed rice and chili-spiced kidney or pinto beans.

Top Sirloin Cap Au Natural

There is nothing quite like a simple meal of barbecued steak with a garden salad and Garlic Smashed Potatoes. Use Grilling Steak such as Top Sirloin, Strip Loin or Tri-tip if you like.

HAMBURGERS

Barbecoa-style Burgers

This burger recipe was inspired by a team of Mexican chefs that were hosted at the Canadian Beef Centre of Excellence. We recommend using Medium Ground Beef for best flavour. If using Lean or Extra Lean, add in a tablespoon or so of butter, cream or minced bacon to enhance flavour. Sauté the onion and garlic to incorporate into the patty better than if added uncooked.  If you can find Ancho Sauce in the grocery store, that can substitute for the chipotle peppers in adobo sauce.
